FRUIT HEAVEN

With the abundance of summer fruits arriving in the shops, gardens, allotments and pick your own farms, there is no excuse for not getting a good deal of your 5 a day (which should be 9 a day really, split between fruit and vegetables ) 

 

 

Fruit Fool

Blend or seive a mixture of whatever is available eg strawberries, raspberries, redcurrants or gooseberries (cook these last 2 first).

Add some agave nectar (available in large supermarkets) or a little honey if it requires sweetening. Fold in half the amount of greek yoghurt or low fat creme fraiche until smooth and venly blended. Quantities are flexible but try 1 spoon of yoghurt to 2 spoons of fruit puree.

This can of course be increased proportionately to feed an army if required! 

 

Gooseberry and Elderflower Cordial

Pick a punnet of gooseberries and top and tail them (NB: if you are freezing goosegogs there is no need to top and tail as they can be shaken when frozen and all the annoying bits will break off before washing them)

Pick about 12 elderflower heads. Wash thoroughly to get any insects out and simmer with the gooseberries or separately in about a pint of water for about 10 minutes. Sieve the cooking water and reserve.

Mix the sieved gooseberries and elderflower water and add some honey to taste. This should give you about 2 pints of cordial which can be diluted with water to make a refreshing drink served with ice, cucumber and mint.

Variation: use sparkling mineral water for a fizzy drink

Simmer in a little water until soft and sieve
